Ready for the week

I love when Sunday afternoon rolls around and the laundry is done, grocery shopping for the week is finished, prep work for efficient weeknight dinners are neatly packed in the fridge and lunches are made. It feels good, and I feel like I am ready for the week ahead.

For lunches this week I made a repeat of a dish I invented a couple of months ago: whole wheat pasta, edamame, roasted squash topped with a homemade spinach pesto (minus pine nuts) and a sprinkle of Parmesan cheese. It's pretty darn yummy and filling and healthy.

I plan to spend the rest of the evening lounging on the couch with a furry bebbie on each hip. Hope your Sunday evening is half as nice.

That looks yummy! I'm currently feeding on some spaghetti that I made on Saturday night. The sauce consists of a jar of spaghetti sauce, diced canned (I know, I know, don't hate me Staishy) tomatoes, and freshly sauteed mushrooms, onion, bell pepper, and garlic. Then I browned some italian sausage (half regular, half hot) and mixed it in. This was served over whole wheat spaghetti. The sauce is how I normally do it, except that, by Staishy's recommendation, I used the italian sausage instead of beef. The whole wheat pasta was also my big sis's idea. Thanks for the recommendation.

I am glad you enjoyed your spaghetti! I love a good spaghetti and there is nothing wrong with canned tomatoes... especially in the off season. I use lots of canned tomatoes. In fact, if I can find a good price on a bushel (or two!) this summer, I hope to can my own. Keep your fingers crossed.
